Okay, so I'm trying to stay on top of this whole, "eating healthier," thing and then mother nature decides to comes along and screw with my cravings! I knew all these emotional roller coaster rides and migraines where visiting me for a reason! Wonderful, I'm not crazy and I'm not becoming bi-polar. It's just PMS.. if that's any better?
Any who, I'm sure most of you have seen all these blogs on frozen yogurt drops- DELICIOUS!!! Well, I NEED ME SOME CHOCOLATE!!!!!! And I wasn't about to head to the store for a chocolate run, so I came up with this SUPER AMAZINGLY DELICIOUS CREATION! I like to call it, "Frozen yogurt drops topped with chocolate covered walnuts." -I'm so creative, I know.
WHAT YOU'LL NEED:
1.) Any flavor of yogurt (I used strawberry) Fat free, low calories. (1) 6 oz can will make about 40 drops
2.) Walnuts, almonds, any kind of nuts you wanna use
3.) Chocolate melts
4.) Wax paper
5.) Piping bag, or zip lock bag
INSTRUCTIONS:
1.) Lay out a 12in length of wax paper.
2.) Take your chocolate melts and melt them according to their directions.
3.) When the chocolate is nice and smooth, dip the walnuts into the chocolate to coat it. Place the dipped walnuts onto the wax paper.
4.) Once all walnuts are dipped and covered, let them sit for about 2-3 minutes until the chocolate is dried and hard again.Once they're fully dried, transfer your walnuts to a bowl or set aside onto a paper towel. (You can keep them on the wax paper but you'll need another piece of wax paper for the yogurt. Less waste! THINK GREEN! lol.)
5.) Take your yogurt and pour it into your piping bag or zip lock bag
A.) If you use a zip lock bag. Move yogurt to one corner of the bag, release any remaining air left in bag, close the bag shut and cut a tiny tip of one corner of the bag off.
6.) Gently squeeze out some drops of yogurt onto the used wax paper, you can make them as big or small as you want.. I made mine big enough to fit half a walnut. (You will need to place this sheet into the freezer, so place the sheet over a cutting board, flat piece of cardboard, plate...etc for easy transferring.)
7.) Once you have as many yogurt drops as you want you can now start placing your walnuts on top of the yogurt. I cut my walnuts in halves, but do whatever makes you happy! =)
8.) When all your yogurt drops are topped, place the wax sheet into the freezer for about 30 minutes.. the yogurt will freeze.
9.) When you decide to eat them, let them sit out in room temperature for about 1 minute (not too long cuz they'll melt.)
10.) ENJOY THIS TASTY TREAT! When my family enjoys their ice cream, I snack on these bad boys! And its just the right amount of chocolate to satisfy those monthly cravings. =)
May I add, my sons love these too. My husband just loves the chocolate covered walnuts. =)
But, my 4 year old response was, "OH MY GOD! THESE ARE DELICIOUS! I GOTTA TELL SOMEONE ABOUT THESE!"
And my 3 years old response was, "YUM!! These are the BOMB-DIGGITY-BOMB!" Don't ask me where he learned that from. Cuz I have no clue.
